Have you heard of Evergreens?
Marcus and I were recently invited to Evergreens, in Seattle, to try the salads. The staff was amazingly friendly and the restaurant had a fresh, earthy feeling. Now, let’s get to the salads!
Evergreens to using seasonal, local, and fresh foods, which make for a yummy salad every time. Their menu had an array of salads with catchy names, from the “Super Bowl,” which has arugula, quinoa, turkey, grape tomatoes, almonds, aged parmesan with an herb pesto, and red wine vinegar, to their “When Berry Met Salad,” which comes with romaine and mixed greens, strawberries, blueberries, pickled beets, walnuts and gorgonzola cheese! Sounds amazing right?! You can personalize your salad by adding your choice of meat, and/or foregoing an ingredient you may not care for. Speaking of personalizing, you can totally make up a salad of your own, using all the fresh ingredients right before you! Just tell them what you want and they make it as you watch! Need a little more than a salad? They also make wraps and grain bowls! It is a one-stop healthy shop!
I ordered the “When Berry Met Salad,” and Marcus tried the “El Sombrero” salad that comes with romaine, avocado, grape tomatoes, fire-roasted corn, jalapeños, black beans, tortilla chips, Beecher’s Flagship cheese and a cilantro-lime dressing. To top it off, he added chicken. We thoroughly enjoyed our salads. They were very fresh, easy, healthy and yummy!
Evergreens currently have three locations in the Seattle area. For my eastside peeps, a new location is opening up in Bellevue, come JULY! They will be right next to Chipotle on 4th street! If you live or work in that area you must check them out!
